Beer Cupcakes

It was one of my guys’ birthday last week and I got some pie for the team during our team meeting. We also had a lively discussion about how some people didn’t like pies.

So when I discovered that it was another one of my guys’ birthday this week, I had to do something different than pie! Cupcake seem like a good choice.  One of my co-workers suggested  Sprinkles Cupcakes. It looked delicious and within the right distance of the office, but Wednesday is a super busy time for me.

So I decided to bake some cupcakes instead. It would be totally cool since I work right across from Whole Foods so getting stuff before going home is totally not an issue. Except that my office is kind of in the middle of the office, and I have to walk across the whole office with groceries.  And well, carrying 6 packs of beer across the office might not set a good example. (Plus it’s heavy! I don’t really want to carry it…)

So I called the Mr. and asked him to pick up some Guinness and milk for me.

As I was driving home I got a call from him that he was not able to find Guinness! He had to meet his friend so he couldn’t go to another store. Boo!

So, as I was walking up to the cash register at the liquor store, the lady said, “Can I see your ID?” I was like, uh I guess.     After she saw my id, she laughed and said you look young.  I think she was looking at my Hello Kitty Credit Card! She double checked my ID twice because of my name too!  Very good, no underage women with hello kitty card who is Asian with none Asian name will be getting any liquor at that liquor store.

I didn’t make frostings because I was too tired. They were so delicious! Can’t taste the beer at all. It was really easy to make, the only thing I would add is a pinch of salt to bring out the flavor more.

If you want to make your own, here’s the recipe.
Beer Cupcake

Cupcake:

  • 1 cup Guinness
  • 1 stick, plus 1 tb, unsalted butter
  • 3/4 cup unsweetened cocoa
  • 2 cups dark brown sugar
  • 3/4 cup sour cream
  • 2 eggs
  • 1 tb vanilla extract
  • 2 cups flour
  • 2 1/2 tsp baking soda
  • Pinch of salt

Glaze*

  • 8 oz cream cheese
  • 1 1/4 cups confectioners’ sugar
  • 1/3 cup milk
  • Preheat oven to 350; butter a muffin tin.

Instructions:

  1. Pre-heat oven to 350 degrees.
  2. Cut the butter in to about 1 inch chunks and add them to the beer.
  3. Melt the butter in the beer.
  4. Remove from heat and whisk in cocoa and sugar
  5. In a bow, whisk the sour cream with eggs and vanilla. Add it into the beer mixture.
  6. Sift flour and baking soda together and fold into the batter
  7. Pour it into the muffin pans.
  8. Cook for 25 minutes or until cake tester come out clean.

Glaze:

  1. Whip cream cheese until smooth
  2. Sift in sugar and beat
  3. Add milk and beat until smooth
  4. Spread glaze over cooled cupcakes
